  • 7 ounces vegan butter softened
  • ounces confectioner's sugar sifted
  • 11 ounces all-purpose flour sifted
  • 1 tbsp cornstarch
  • 1 tbsp almond milk
  • 2 tsp vanilla extract
  • ½ tsp almond extract
  • 2 tbsp granulated sugar for garnish

Instructions
 

Let's begin!

  • Preheat oven to 350°F. Line a baking sheet with parchment paper, then set aside.
  • In a large bowl, whip together the vegan butter and confectioner's sugar to create a soft buttercream.
  • Add the flour, cornstarch, almond milk, vanilla extract, and almond extract. Mix until just combined.
  • Turn the dough on a lightly floured surface, then flatten the dough ½-inch thick.
  • Using a 2-inch cookie cutter, cut out circles until all the dough is used. transfer them on the prepared baking sheet.
  • Bake the cookies for 10-15 minutes, regularly checking to make sure they are baking evenly. Turn your baking sheet around to face the other way half way through, if necessary.
  • After baking, let them cool on a cooling rack then sprinkle with sugar on top.
  • Serve, and enjoy with family and friends!
