Vegan Green Olive Salad Dressing

- 18 medium green olives pitted
- 1-2 cloves garlic
- 2 tbsp olive oil extra-virgin
- 2-3 tbsp lemon juice white wine or sherry vinegar
- kosher salt to taste
- black pepper freshly ground. to taste
Make a paste with garlic and pitted olives using mortar. (Any food processor will do.)
Put the olive mixture in a blender and stir in the lemon juice and oil.
Season to taste with kosher salt and black pepper.
Transfer into a sealed glass jar Sealed and refrigerate for up to a week.
