Instead of being garnish, olives are coarsely diced and used as a dressing in this salad. It’s also great as a dipping sauce for warm crusty bread pieces.

Olives come in different varieties and you may find them in jars on supermarket shelves or at an olive bar at a gourmet shop. Green olives from Spain are the most frequent, with Manzanilla and Gordal being two popular varieties in American supermarkets. Ingredients
  

  • 18 medium green olives pitted
  • 1-2 cloves garlic
  • 2 tbsp olive oil extra-virgin
  • 2-3 tbsp lemon juice white wine or sherry vinegar
  • kosher salt to taste
  • black pepper freshly ground. to taste

Instructions
 

  • Make a paste with garlic and pitted olives using mortar. (Any food processor will do.)
  • Put the olive mixture in a blender and stir in the lemon juice and oil.
  • Season to taste with kosher salt and black pepper.
  • Transfer into a sealed glass jar Sealed and refrigerate for up to a week.
