Vegan Maple Pumpkin Overnight Oats

Start your day with these fulfilling vegan maple pumpkin overnight oats. It will give you sustained energy all morning long and is made with basic plant-based ingredients. In this recipe, we're using maple and pumpkin puree. This recipe is simple to follow and tastes delicious. In addition, it is gluten-free, dairy-free, and vegan.

Ingredients
  

  • 4 oz almond milk or any dairy-free milk
  • 2 oz pumpkin canned
  • 1 tbsp maple syrup or agave syrup
  • 1 tsp cinnamon alternatively used pumpkin pie spice
  • pinch kosher salt to taste, if needed. (optional)
  • ½ cup old-fashioned oats any gluten-free oats can be used

Instructions
 

  • In a mason jar, mix all the ingredients and shake to mix.
  • Store in the refrigerator overnight or enjoy it right away!

Notes

  • For the extra crunch: Add the toppings in the morning instead of soaking them overnight.
  • Superfood breakfast: Top with fresh, frozen, dried fruits or even nuts, seeds, and spices.
