- 10-12 mushrooms chopped
- 4 red onions finely chopped
- 2 tomatoes
- 2 Kashmiri red chili
- 6-7 cloves garlic
- 1 inch ginger
- 3 green chili
- ½ cup vegetable oil
- 1 tsp cumin
- 1 tsp red chili powder
- ½ tsp turmeric powder
- ¼ tsp coriander powder
- ½ tsp garam masala
- 1 pinch kosher salt to taste
- 1 cup water
- 2 sprigs cilantro chopped
Let's Begin!
In a food processor, pulse the tomatoes and Kashmiri red chili until it forms a rough paste. Transfer to a small bowl. Set aside.
In a grinder or a food processor, blend the garlic, ginger, and green chili until finely ground. transfer to a small bowl. Set aside.
Heat the oil in a heavy-based pot over medium heat and toast the cumin seeds until fragrant. Add the onions and cook for 5-10 minutes or until caramelized.
Add the garlic mixture and mix well until fragrant. Then add the tomato mixture and cook for 2-3 minutes until softened.
Add the red chili powder, turmeric powder, coriander powder, garam masala, and salt. Mix thoroughly until all the spices are combined.
Mix in the mushrooms and water. Cover and cook for 10 minutes or until the mushrooms have softened and the sauce is thick.
Serve with chopped cilantro on top.
