Vegan Mushroom Curry
Let's gather the ingredients!
- 10-12 mushrooms chopped
- 4 red onions finely chopped
- 2 tomatoes
- 2 Kashmiri red chili
- 6-7 cloves garlic
- 1 inch ginger
- 3 green chili
- ½ cup vegetable oil
- 1 tsp cumin
- 1 tsp red chili powder
- ½ tsp turmeric powder
- ¼ tsp coriander powder
- ½ tsp garam masala
- 1 pinch kosher salt to taste
- 1 cup water
- 2 sprigs cilantro chopped
- In a food processor, pulse the tomatoes and Kashmiri red chili until it forms a rough paste. Transfer to a small bowl. Set aside.
- In a grinder or a food processor, blend the garlic, ginger, and green chili until finely ground. transfer to a small bowl. Set aside.
- Heat the oil in a heavy-based pot over medium heat and toast the cumin seeds until fragrant. Add the onions and cook for 5-10 minutes or until caramelized.
- Add the garlic mixture and mix well until fragrant. Then add the tomato mixture and cook for 2-3 minutes until softened.
- Add the red chili powder, turmeric powder, coriander powder, garam masala, and salt. Mix thoroughly until all the spices are combined.
- Mix in the mushrooms and water. Cover and cook for 10 minutes or until the mushrooms have softened and the sauce is thick.
- Serve with chopped cilantro on top.
