  • 10-12 mushrooms chopped
  • 4 red onions finely chopped
  • 2 tomatoes
  • 2 Kashmiri red chili
  • 6-7 cloves garlic
  • 1 inch ginger
  • 3 green chili
  • ½ cup vegetable oil
  • 1 tsp cumin
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • ¼ tsp coriander powder
  • ½ tsp garam masala
  • 1 pinch kosher salt to taste
  • 1 cup water
  • 2 sprigs cilantro chopped

  • In a food processor, pulse the tomatoes and Kashmiri red chili until it forms a rough paste. Transfer to a small bowl. Set aside.
  • In a grinder or a food processor, blend the garlic, ginger, and green chili until finely ground. transfer to a small bowl. Set aside.
  • Heat the oil in a heavy-based pot over medium heat and toast the cumin seeds until fragrant. Add the onions and cook for 5-10 minutes or until caramelized.
  • Add the garlic mixture and mix well until fragrant. Then add the tomato mixture and cook for 2-3 minutes until softened.
  • Add the red chili powder, turmeric powder, coriander powder, garam masala, and salt. Mix thoroughly until all the spices are combined.
  • Mix in the mushrooms and water. Cover and cook for 10 minutes or until the mushrooms have softened and the sauce is thick.
  • Serve with chopped cilantro on top.
