Vegan Noodle Kugel

This recipe is the vegan version of the traditional Jewish dish. It is usually served as a side dish or main course during the fall season. Serve it with a green salad and some crusty bread for a complete meal. Enjoy!

Ingredients
  

Healthy ingredients in a casserole:

  • 1 1/2 cup noodles ribbon style or any of your preferred noodles.
  • 8 oz. tofu silken or soft
  • 8 oz. vegan sour cream or vegan cream cheese; homemade or store-bought
  • 2 oz. maple syrup
  • 5 oz. raisins brown or dark
  • 1 1/2 medium apple or a pear; cut into dice
  • 2 oz. vegan butter
  • 3 tsp vanilla extract
  • 2 tsp cinnamon

Instructions

  • Preheat the oven to 350º F.
  • Cook your preferred noodles based on the package instructions. Set them aside.
  • In a food processor, add the tofu, vegan cream cheese, vegan butter, maple syrup, and vanilla extract. Blend them until creamy.
  • In a baking dish, pour the tofu mixture then add the apples, and raisins, and sprinkle with ground cinnamon. Stir until everything is incorporated.
  • Bake for 45 minutes or until golden brown. Serve warm and enjoy!

Storing Tips: Store in an airtight container in the refrigerator for up to four days.
Recipe Tips
-For extra flavor, add sautéed onions or mushrooms to the kugel.
-For a more decadent dish, top the kugel with vegan sour cream or yogurt.
-If you cannot find egg-free noodles, you can use regular pasta noodles and cook them according to the package directions. Drain and cool the noodles before adding them to the other ingredients.
