For The Vegan Pasta Salad with Grilled Peaches: 4-5 cups penne pasta 4 peach pitted and halved, ripe 3 tsp lemon zest 2 tbsp Dijon mustard 3 cloves garlic minced 16 oz. baby arugula fresh 2-3 cups blueberries fresh kosher salt to taste black pepper freshly ground, to taste 4-5 tsp maple syrup pure
For The Vegan Pasta Salad with Grilled Peaches: Boiled the pasta as per the package instruction. Strain with chilled water and strain again.
In grilled stove, grilled the four peach halves for at least 8-9 minutes or till the grill marks appear.
For the dressing, combine mustard, garlic, lemon juice and zest. Set them aside.
In a large bowl, add the pasta, arugula, blueberries, and chopped peaches. Mix to coat. Season to taste with pepper and salt.
Topped with grilled peaches and pour with maple syrup. Enjoy!
