  • 2 tbsp extra virgin olive oil
  • 1 yellow onion finely chopped
  • 1 tsp kosher salt
  • 4 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • tsp smoked paprika
  • 1 tsp oregano dried
  • 1 15-ounce can pumpkin puree
  • 3/4 cup corn kernels frozen
  • 1 15-ounce can black beans drained
  • 1 15-ounce can diced tomatoes with their juices
  • ½ cup vegetable broth

Instructions
 

Let's Begin!

  • In a large pot, heat the olive oil over medium heat. Add the onion with salt and cook for about 3 minutes until translucent. Add the garlic then continue to cook for 2 more minutes.
  • Add the spices and tomato paste. Stir together and cook for 2 minutes. Add the pumpkin puree, diced tomatoes, drained beans, corn and vegetable broth.
  • Bring to a low boil and cook for about 10 minutes, until heated through. Add salt and pepper to taste.
  • Serve warm and enjoy with family and friends!
