- 2 tbsp extra virgin olive oil
- 1 yellow onion finely chopped
- 1 tsp kosher salt
- 4 cloves garlic minced
- 2 tbsp tomato paste
- 1 tbsp chili powder
- 1 tbsp cumin
- 1½ tsp smoked paprika
- 1 tsp oregano dried
- 1 15-ounce can pumpkin puree
- 3/4 cup corn kernels frozen
- 1 15-ounce can black beans drained
- 1 15-ounce can diced tomatoes with their juices
- ½ cup vegetable broth
Let's Begin!
In a large pot, heat the olive oil over medium heat. Add the onion with salt and cook for about 3 minutes until translucent. Add the garlic then continue to cook for 2 more minutes.
Add the spices and tomato paste. Stir together and cook for 2 minutes. Add the pumpkin puree, diced tomatoes, drained beans, corn and vegetable broth.
Bring to a low boil and cook for about 10 minutes, until heated through. Add salt and pepper to taste.
