Pumpkin
Packed with essential vitamins and minerals, pumpkin is a nutritional powerhouse. It’s rich in fiber, which aids digestion and promotes a healthy gut. Additionally, pumpkin is loaded with antioxidants that support a strong immune system and help fight inflammation.
Beans
Whether you choose kidney beans, black beans, or any other variety, beans are an excellent plant-based protein source. They are also high in fiber, which helps regulate blood sugar levels and promotes a feeling of fullness. Beans are also known to support heart health due to their low-fat content and ability to lower cholesterol levels.
Tomatoes
Bursting with the antioxidant lycopene, tomatoes are great for your overall health. Lycopene has been linked to reducing the risk of certain types of cancers and promoting healthy skin. Tomatoes are also rich in vitamin C, which supports the immune system and collagen production.
Corn Kernels
Adding a touch of sweetness and texture to the chili, corn kernels bring their own set of health benefits. They are a good source of fiber, vitamins, and minerals. Corn also contains antioxidants that contribute to eye health and may help protect against certain chronic diseases.
Spices
The spices in Vegan Pumpkin Chili, such as cumin, chili powder, and paprika, not only enhance the flavors but also offer health benefits. Cumin is known for its digestive properties, chili powder contains capsaicin which may boost metabolism, and paprika is a good source of vitamin A and other antioxidants.
