Ingredient Tips

Finely chop the celery to add a crunchy texture and a subtle flavor to the meatloaf. Make sure to remove any tough or fibrous parts before using.

Grate or finely chop the carrots to add sweetness, color, and moisture to the meatloaf. Carrots also provide additional nutrients like vitamin A and fiber.

Dice or finely chop the mushrooms to add a savory and meaty flavor to the meatloaf. Mushrooms also contribute moisture and texture to the dish. You can use any mushrooms you prefer, such as baby Bella, button, or cremini mushrooms.

Mash the chickpeas well using a fork or a food processor. The mashed chickpeas will act as a binder and help hold the meatloaf together. They also add fiber to the dish.

Barbecue Sauce

Choose a vegan-friendly barbecue sauce that suits your taste preferences. The barbecue sauce will add tanginess, sweetness, and a depth of flavor to the meatloaf. You can use store-bought barbecue sauce or make your own using ingredients like tomato paste, vinegar, maple syrup, and spices.

Remember to adjust the ingredients’ quantities based on your preferences and the meatloaf’s desired consistency. Don’t be afraid to get creative and add your favorite herbs, spices, or even a touch of liquid smoke for additional flavor. Enjoy experimenting with these ingredients to create a delicious and satisfying vegan meatloaf.

Let's gather the ingredients!

  • 1 tbsp extra-virgin olive oil
  • ½ yellow onion finely chopped
  • 2 stalks celery finely chopped
  • 1 medium carrot finely chopped
  • 1 cup baby bella mushrooms finely chopped
  • 2 cans chickpeas drained and rinsed
  • 1 cup panko bread crumbs
  • ¼ cup parsley freshly chopped
  • 2 tbsp soy sauce
  • ¼ cup tomato ketchup
  • ¼ cup barbecue sauce
  • ½ tsp smoked paprika

Let's Begin!

  • Preheat oven to 375ºF and line a 5x8-inch loaf pan with parchment paper.
  • In a large skillet over medium heat, heat the oil, then add the onion, celery, carrot, and mushrooms, and cook, stirring occasionally, until the vegetables are soft and most of the liquid has cooked out.
  • Using a food processor, pulse the chickpeas until a rough paste forms. Transfer to a large bowl, then add cooked vegetables, bread crumbs, parsley, and soy sauce to the bowl with chickpeas.
  • In a medium bowl, whisk together the ketchup and barbecue sauce. Add half of this mixture to the bowl with the chickpeas. Season with paprika, salt, and pepper, and stir until all ingredients are evenly incorporated.
  • Transfer the chickpea mixture to the prepared loaf pan, packing the mixture in. Smooth the top, then brush with half of the remaining ketchup mixture and bake for 30 minutes. Remove from oven, brush with remaining ketchup mixture, and bake 30 minutes more.
  • Let the meatloaf cool for 10 minutes after removing from the oven, then garnish with parsley.
  • Serve and enjoy with family and friends!
