  • 1 tbsp olive oil
  • 1 medium onion diced
  • ¾ cup carrot shredded
  • 2 jalapeno deseeded, minced
  • 2 cloves garlic minced
  • 1 cup cauliflower finely chopped
  • 2 tbsp chili powder
  • 1 tbsp cumin ground
  • 2 cups tomatoes fresh, diced
  • cups tomato sauce
  • 1 can kidney beans 15-ounce, drained and rinsed
  • 1 can black beans 15-ounce, drained and rinsed
  • 1 bunch cilantro fresh, chopped

  • Heat the oil in a large heavy pot over medium-high heat. Add the onions, carrots, jalapeno, and garlic, then saute until the onion is soft and translucent.
  • Add the cauliflower, chili powder, and cumin. Stir well until well combined.
  • Stir in the tomatoes, tomato sauce, and beans. Bring to a boil, then reduce the heat, cover, and simmer, stirring occasionally for about an hour until the beans are tender.
  • Season with salt and pepper to taste. Serve with a sprinkle of fresh cilantro.
