White Chocolate Gingerbread Truffles

These truffles are festive, fun, and most importantly, delicious! Plus, they're easy to make and perfect for any occasion.

Ingredients
  

Easy-to-find ingredients:

  • 4 cups gingersnap cookies crumbled
  • 3/4 oz. cream cheese softened, vegan
  • ¼ tsp vanilla extract
  • 1 1/2 cups white chocolate vegan, melted

Instructions
 

Easy-to-make truffles:

  • Line a baking sheet.
  • Using a food processor, pulse the gingersnap cookies until they crumbled and are crushed then add and pulse the cream cheese and vanilla extract.
  • Using a scoop, heap a tablespoon of crumbled cookies and roll it into your hands until they form a ball. Line them on a baking sheet and refrigerate for 30 minutes.
  • In a small saucepan over low heat, melt the white chocolate chips; dunk and dip the balls until they are coated. Line them on a baking sheet.
  • Sprinkle with cookie crumbs and refrigerate until set or until the balls are enough to hold the melted white chocolate.
