White Chocolate Gingerbread Truffles
- 4 cups gingersnap cookies crumbled
- 3/4 oz. cream cheese softened, vegan
- ¼ tsp vanilla extract
- 1 1/2 cups white chocolate vegan, melted
- Line a baking sheet.
- Using a food processor, pulse the gingersnap cookies until they crumbled and are crushed then add and pulse the cream cheese and vanilla extract.
- Using a scoop, heap a tablespoon of crumbled cookies and roll it into your hands until they form a ball. Line them on a baking sheet and refrigerate for 30 minutes.
- In a small saucepan over low heat, melt the white chocolate chips; dunk and dip the balls until they are coated. Line them on a baking sheet.
- Sprinkle with cookie crumbs and refrigerate until set or until the balls are enough to hold the melted white chocolate.
