Zucchini Involtini with Cashew Ricotta

Zucchini

  • 2-3 zucchini
  • kosher salt to sprinkle

Filling and Sauce

  • cups marinara sauce
  • cups vegan cashew ricotta
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 4 tbsp parsley chopped
  • salt and pepper to taste

Instructions
 

Let's Begin!

  • Preheat the oven to 400°F.
  • Peel the zucchinis lengthwise into ¼-inch thick slices using a vegetable peeler or a mandolin. Finely chop the leftovers for the filling.
  • Lay the zucchini slices on a baking tray lined with paper towels, then sprinkle the slices with salt. Set aside for 5 minutes to soften.
  • In a large pan over medium heat, saute the onions and finely chopped zucchini with olive oil until tender and browned.
  • Add the garlic and saute for another minute until fragrant. Transfer to a bowl and allow to cool slightly. Stir in the parsley and pepper to taste.
  • Pour the marinara sauce into a large baking dish, then set aside.
  • once the zucchinis are soft and easy to roll, pat them dry with paper towels.
  • In a bowl, mix the cashew ricotta and sauteed onion mixture until fully combined. Spread the mixture over each zucchini.
  • Roll up each slice then place them side-by-side in the baking dish with the marinara sauce. Making sure they do not unroll.
  • Bake for 25-30 minutes, or until the rolls are lightly golden-brown on top.
  • Serve hot or warm with more parsley on top. Enjoy with family and friends!
