Mixed Vegetables With Air Fry Tofu

- 1 cup tofu extra firm, cut into strips
- 4-5 asparagus stalks, ends trimmed and cut in half
- 5 brussels sprouts halved
- 3-4 mushrooms brown, sliced
- 2-3 cloves garlic minced
- Italian seasoning
- sesame oil or olive oil
- soy sauce to taste
- kosher salt to taste
- black pepper freshly ground
- sesame seeds roasted, white
In a mixing bowl, place all the ingredients. Mix well
Preheat the air fryer to 350°F, then place the mixed ingredients into the air fryer basket. When cooked, top with roasted white sesame seeds. Served with steamed rice, if desired.
Note:
As with any Stir Fry or Air Fry, change up the ingredients according to what you have on hand. In fact, even the tofu might be replaced with seitan or tempeh.
