Ingredients
  

Let's gather the ingredients!

  • ¾ cup chickpea flour
  • 1 tsp baking powder
  • tsp garlic powder
  • ¼ cup nutritional yeast
  • ¼ tsp paprika
  • 1 tsp kosher salt
  • 1 cup zucchini grated
  • ¼ cup spring onions chopped
  • 1 cup corn kernels fresh, frozen, or canned
  • salt and pepper to taste

Dipping sauce:

  • cup vegan yogurt or coconut yogurt
  • tsp sweet paprika
  • ¼ tsp chili powder
  • 1 tsp fresh dill chopped
  • salt and pepper to taste

Instructions
 

Let's Begin!

  • Place the grated zucchini in a strainer or cheesecloth and squeeze out as much liquid. Leave to drain.
  • In a large bowl, combine the flour, baking powder, garlic powder, nutritional yeast, paprika, salt, and pepper. mix well.
  • Add in ½ cup of water and whisk together. This will form a thick batter.
  • Add in the grated zucchini, corn, and spring onions, then mix well.
  • Use just enough oil to coat the pan and place it on medium heat.
  • Scoop a couple of tablespoons of batter onto the pan and create a fritter, circular shape with the batter. Repeat this step until you fill the pan with fitters.
  • Once the batter has dried at the top and the edges have a nice golden brown color, flip it over and fry for another 1-2 minutes.
  • Repeat this process until you have used all the batter.
  • For the dipping sauce, mix all ingredients well in a small dish and serve with the fritters.
  • Serve and enjoy with family and friends!
