Zucchini Pancakes

  • 1 medium zucchini cut into thin match sticks
  • ½ tsp kosher salt
  • ½ onion thinly sliced
  • 2 green peppers thinly sliced
  • ½ cup all-purpose flour
  • 1 flax egg

Dipping Sauce

  • 1 tbsp soy sauce
  • 1 tsp white vinegar
  • ½ tbsp water
  • ½ tsp brown sugar
  • ¼ tsp black pepper
  • 1 tsp gochugaru Korean red chili pepper flakes

Instructions
 

Let's Begin!

  • Place the zucchini in a large bowl and sprinkle with salt. Let sit for about 10 minutes until wilted and released some liquid.
  • Squeeze the liquid out from the zucchini as much as possible, reserving the liquid in the bowl. Set the zucchini aside in another bowl or plate.
  • Add the flax egg and flour to the bowl with the liquid from squeezing zucchini. Mix the batter well with a spoon. Be careful not to over-mix. Add the zucchini, onion, and chili peppers.
  • Heat a skillet with two tablespoons of oil over medium-high heat. Add about 2 heaping tablespoons of the batter and spread it evenly into a thin round shape.
  • Reduce the heat to medium, and cook until the bottom is light golden brown, about 2 minutes on each side. Repeat the process with the remaining batter.
  • To make the dipping sauce, place all the ingredients in a bowl and mix until well combined.
  • Serve the pancakes warm with the dipping sauce and enjoy them with family and friends!
