Healthy traditional cake, panforte Christmas cake!
Panforte (Christmas Cake)
- 3/4 cup almonds roast them for 5 minutes
- 3/4 cup hazelnuts roast them for 5 minutes
- 1 1/2 cups candied fruit vegan
- 8 oz. all-purpose flour plus 3 tbsp
- 3/4 tsp coriander powder
- 3/4 tsp cloves ground
- 3/4 tsp nutmeg
- 1 tsp cinnamon
- 1/2 cup maple syrup
- 2 tbsp water
- 8 oz. confectioners' sugar plus 2 tbsp
Bake the panforte:
- Preheat the oven to 300°F and line a cake pan with parchment paper.
- In a large bowl, toss to combine the hazelnuts, almond nuts, and vegan candied fruit; in a separate bowl, combine the all-purpose and all the spices. Set aside.
- In a small pot over medium-high heat, whisk together the maple syrup, water, and confectioners' sugar and boil them for 5 minutes or until the sugar is dissolved.
- Combine together the almond mixture, maple syrup mixture, and all-purpose flour mixture. Mix until fully combined.
- On a prepared cake pan, transfer the combined mixtures and flatten them using wet hands or a spoon and dust with confectioners' sugar.
- Bake for 40 minutes; remove from the oven and allow to cool for 15 minutes.
- Slice, serve, and enjoy!
