Ingredients
  

Panforte ingredients:

  • 3/4 cup almonds roast them for 5 minutes
  • 3/4 cup hazelnuts roast them for 5 minutes
  • 1 1/2 cups candied fruit vegan
  • 8 oz. all-purpose flour plus 3 tbsp
  • 3/4 tsp coriander powder
  • 3/4 tsp cloves ground
  • 3/4 tsp nutmeg
  • 1 tsp cinnamon
  • 1/2 cup maple syrup
  • 2 tbsp water
  • 8 oz. confectioners' sugar plus 2 tbsp

Instructions
 

Bake the panforte:

  • Preheat the oven to 300°F and line a cake pan with parchment paper.
  • In a large bowl, toss to combine the hazelnuts, almond nuts, and vegan candied fruit; in a separate bowl, combine the all-purpose and all the spices. Set aside.
  • In a small pot over medium-high heat, whisk together the maple syrup, water, and confectioners' sugar and boil them for 5 minutes or until the sugar is dissolved.
  • Combine together the almond mixture, maple syrup mixture, and all-purpose flour mixture. Mix until fully combined.
  • On a prepared cake pan, transfer the combined mixtures and flatten them using wet hands or a spoon and dust with confectioners' sugar.
  • Bake for 40 minutes; remove from the oven and allow to cool for 15 minutes.
  • Slice, serve, and enjoy!
