Make the most out of Valentine’s Day and use fresh fruits to make delicious muffins for friends and family. They’ll all love these Vegan Cherry Chocolate Muffins! Because muffins are an acceptable little gift I gave some of the muffins back to my boyfriend’s parents. In addition, she loves the combination of cherries and chocolate! It’s like a white version of Black Forest Cake -White Forest, so to say she was satisfied!

I know cherries are always magical in bakes, and chocolate does its bit. But the combination of the two has an out-of-this-world mouth feel, making the moistest, fluffiest, and gooiest muffins ever!

VARIATIONS OF MUFFIN RECIPE

There are a lot of ingredient substitutes you can use in a muffin recipe. The next best thing for cherries is almonds. Use almond meal or chopped almonds for healthy fats, especially if you are having muffins for breakfast. You can even top them with almond slivers. Toasted, they lend a gorgeous crunch factor.

 

WHAT IS THE BEST FLOUR FOR MUFFINS?

  • All-purpose flour is the obvious choice.  But if you want to keep them healthy, use either white wheat or quinoa flour. In fact, I use white wheat for almost everything!
  • For gluten-free muffins, use buckwheat flour.

 

Vegan Cherry Chocolate Muffins Recipe:

VEGAN CHERRY CHOCOLATE MUFFINS

Super fluffy, tender, moist, and healthy Chocolate Muffins. They are naturally sweetened: Apples and Date Paste. So easy to make, with less than 10 ingredients, and insanely delicious.

Ingredients
  

Wet Ingredients

  • 1 medium apple 180g
  • 2/3 cup date paste
  • 1 cup vegetable milk
  • 3 flax eggs 1 flax egg = 1 tbsp ground flax seeds (7g+ 3 tbsp water)
  • 1/2 cup EVOO Extra Virgin Olive Oil

Dry Ingredients

  • 1 1/2 cup whole wheat/spelt flour
  • 1/2 cup cacao powder
  • 1/2 tbsp cinnamon
  • 1 tbsp baking powder 16g
  • 1/4 tsp baking soda
  • Pinch of salt
  • 60 g cherries

Instructions
 

  • Preheat the oven to 200ºC.
  • Cook apples: Peel them, cut them into 0.5cm pieces, and cook them in hot water or in the microwave (5 minutes) until soft.
  • Mix wet ingredients: Cooked apples and Date Paste - you can follow our recipe Healthy Sweetener Date Paste, milk (we use soy), oil, and flax eggs. You can also blend them until smooth.
  • Mix dry ingredients: Mix all dry ingredients in a large bowl.
  • Mix wet and dry ingredients and add cut cherries into pieces.
  • Transfer the batter to a greased muffin pan and bake it at 180°C for 25 minutes. Let cool before removing the muffins from the pan.

Notes:
  • You can make our Healthy Frosting by adding 1 tbsp of cacao powder to make a chocolate frosting.
 
  • You can add more cherries but keep in mind that the texture of the muffins would change because the fruit moistens the batter.
