  • 1/2 cup almond milk
  • 1/4 cup maple syrup
  • 2 tbsp applesauce

Frosting

  • 3/4 cup raw cashews soaked for 2 hours and rinsed
  • 1 tbsp coconut oil melted
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1/4 tsp kosher salt
  • 3 tbsp almond milk
  • 1/4 cup almond roughly chopped

  • Preheat oven to 350 F. Grease a donut pan mold with cooking spray. Set aside.
  • In a large bowl, combine the flour, almond milk, maple syrup, applesauce, cinnamon, shredded carrots, and salt. Mix into a smooth batter. Be careful not to overmix.
