Gingerbread Crumble (Blackberry & Apple Filling)
Ingredients
Blackberry & Apple Filling:
- 2 medium apples peeled and cubed
- 1 cup blackberry
- 2 tbsp coconut sugar
- 4 tbsp water
Crumble Topping:
- 1 1/2 cup almond flour
- 3 tbsp olive oil
- 1 tsp molasses blackstrap
- 1 tbsp coconut sugar
- 1 ½ tsp ginger ground
- 1 tsp pumpkin spice
- kosher salt pinch
Instructions
- Preheat oven to 350°F and prepare the baking dish.
- In a saucepan over medium-high heat, add water apples, blackberries, and coconut sugar. Simmer for 10 minutes until the fruits are soft.
- To make the crumble, in a mixing bowl, whisk together the almond flour, molasses, coconut sugar, ginger, pumpkin spice, and kosher salt.
- In a prepared baking dish, add the boiled apples and blackberries and top with the prepared crumble mixture.
- Bake for 10 minutes or until the crumble is golden brown.
- Serve with a dollop of vegan ice cream or vegan whipped cream.
