  • 1 Onion (chopped)
  • 2 Cloves Garlic (crushed)
  • 1 Red bell pepper (chopped)
  • 1/2 Cup Vegetable broth
  • 28 Ounce Can Fire-roasted tomatoes (chopped)
  • 4 Zucchini (small, sliced)
  • 2 potatoes (cut into small chunks)
  • 1 cup carrots (frozen or fresh, sliced)
  • 2 Yellow squash (small, sliced)
  • 1 Cup Green beans (cut in 1 inch pieces)
  • 1 Cup corn kernels (frozen or fresh)
  • 2 cup peas (frozen )
  • 1 Tbsp Soy sauce (optional)
  • 1 Tbsp Parsley flakes
  • 1 Tsp basil (dried)
  • 1 Tsp Oregano
  • 3 cups chickpeas (cooked, about 2- 16 oz cans, blended)
  • 1 cup spinach (frozen or fresh, chopped)
  • 16 ounces seitan (diced)
    1. Place the onion, garlic and bell pepper in a large pot with the vegetable broth. Cook and stir until slightly softened, 3 to 4 minutes.
    2. Add the tomatoes, potatoes, carrots, zucchini, yellow squash, and beans. Cover and simmer over medium heat for 15 minutes or until potatoes are fork tender.
    3. Add the corn and seasonings, except for the blended chickpeas Cook for another 10 minutes.
    4. Add the chickpeas and cook, stirring constantly, until thickened.

    Hint: If you have some fresh herbs in your garden, use those in place of the dried. Substitute 1/4 cup chopped fresh parsley, 1 tablespoon chopped fresh basil and 1/2 tablespoon chopped fresh oregano.

    Note: We blend the chickpeas to use as a nutritious thickener. You may include them whole, if you prefer, but you may need to use cornstarch as a thickener or blend about 1/3 of your stew and then add back in to create a thick stew.
