Ingredients
  

Crust:

  • 1 1/2 cups old-fashioned oats
  • 1/2 cup almonds
  • 5 tbsp olive oil
  • 2 tbsp agave syrup or any vegan sweeteners

Cranberry Layer:

  • 8 oz. water
  • 2 cups cranberries fresh or frozen
  • 1/4 cup agave syrup or any vegan sweeteners
  • 1 tsp agar agar powder

White Chocolate Layer:

  • cup almond milk unsweetened
  • 1 cup cashews soaked
  • ¾ cup cocoa butter: melted and cooled
  • 1/3 tbsp agave syrup or any vegan sweeteners
  • 6 tbsp white chocolate vegan; melted and cooled

Instructions
 

Bake the crust:

  • Preheat the oven to 350°F and line a baking tart.
  • In a food processor, pulse together until crumbs the old-fashioned oats and almond. Then, add the agave syrup and coconut oil until fully combined.
  • Spread the crust mixture and gently press the crust over the baking tart, and bake for 10 minutes or until golden brown; remove and allow them to cool.

Prepare the cranberry layer:

  • In a small saucepan over medium-low heat, add the water, cranberries, agave syrup, and agar agar powder. Simmer for 15 minutes.
  • Over the cooled baked crust, pour and spread the cranberry mixture; refrigerate for 15 minutes.

Meanwhile, prepare the white chocolate:

  • In a saucepan over medium-low heat, melt the white chocolate and cocoa butter.
  • Using a food processor, process until smooth the white chocolate mixture, cashews, agave syrup, and almond milk.
  • Over the cranberry layer, pour the white chocolate mixture and refrigerate again for at least 3-4 hours.

Serve and enjoy!
