Baked Egg Nog Cheesecake Bites
Ingredients
Crust ingredients:
- 1 3/4 cup dates roughly chopped
- 1 3/4 cup Granola chocolate
Filling ingredients:
- 1 cup cashew soaked overnight
- 1 cup coconut cream vegan
- 8 oz cream cheese vegan
- 1 tbsp baking powder
- 1 tbsp coconut oil melted
- salt pinch
- 1 1/2 tsp nutmeg ground
- 1/2 tsp ginger ground
- turmeric pinch, for coloring
- 1 tbsp confectioners' sugar coconut sugar would work as well
Instructions
Make and bake the crust:
- Preheat the oven to 325°F and prepare a muffin tin with silicone muffin cups or spray with an oil spray.
- In a food processor, pulse together the dates and chocolate granola until they form a rough crumble.
- Scoop the crumble crust into each muffin tin and gently press using your fingers.
- Bake the crusts for 5 minutes; remove them from the heat and set aside.
Prepare the filling:
- In a food processor, pulse together the cashews, coconut cream, cream cheese, baking powder, coconut oil, spices, kosher salt, and confectioners' sugar.
- Pour them equally into each muffin tin and bake them for 10 minutes.
Serve and enjoy!
- Serve with vegan whipped coconut cream and a cup of coffee. Enjoy!

For an even simpler dessert, use phyllo dough instead of the granola crust. Simply cut the dough into squares and place into the muffin tin cups.
