Easy Apple and Cranberry Tea Cake
- 1 cup all-purpose flour
- 3 tbsp baking powder
- 2 tbsp baking soda
- 1/4 tsp kosher salt
- 3/4 cup confectioners' sugar
- 2 tsp cinnamon divided, ground
- 1 tbsp orange zest grated
- 2 tbsp flax egg
- 4 tbsp orange juice
- 1/4 cup butter vegan, melted
- 1/2 tsp vanilla extract
- 1/4 cup sour cream vegan
- 1 large apple Granny smith; peeled, cored, and diced
- 1 3/4 oz. cranberries fresh or frozen
Easy-to-make tea cake:
- Preheat the oven to 325°F and grease the baking dish.
- In a medium bowl, mix the all-purpose flour, baking soda, baking powder, orange zest, confectioners' sugar, cinnamon, and kosher salt. Mix them well.
- In a separate bowl, mix the flax egg, vegan sour cream, orange juice, and vegan butter. Mix them well.
- Whisk together the all-purpose flour mixture and flax egg mixture until the mixture is fully combined.
- Pour the batter into a baking dish and arrange the apples and cranberries over the batter.
