  • 2 tbsp flax egg
  • 4 tbsp orange juice
  • 1/4 cup butter vegan, melted
  • 1/2 tsp vanilla extract
  • 1/4 cup sour cream vegan
  • 1 large apple Granny smith; peeled, cored, and diced
  • 1 3/4 oz. cranberries fresh or frozen

Instructions
 

Easy-to-make tea cake:

  • Preheat the oven to 325°F and grease the baking dish.
  • In a medium bowl, mix the all-purpose flour, baking soda, baking powder, orange zest, confectioners' sugar, cinnamon, and kosher salt. Mix them well.
  • In a separate bowl, mix the flax egg, vegan sour cream, orange juice, and vegan butter. Mix them well.
  • Whisk together the all-purpose flour mixture and flax egg mixture until the mixture is fully combined.
  • Pour the batter into a baking dish and arrange the apples and cranberries over the batter.
  • Bake for 60 minutes or until the inserted toothpick comes out clean.
  • Serve and sprinkle with cinnamon for fall flavors.
