Ingredients

- 1 tbsp extra-virgin olive oil
- ½ yellow onion finely chopped
- 2 stalks celery finely chopped
- 1 medium carrot finely chopped
- 1 cup baby bella mushrooms finely chopped
- 2 cans chickpeas drained and rinsed
- 1 cup panko bread crumbs
- ¼ cup parsley freshly chopped
- 2 tbsp soy sauce
- ¼ cup tomato ketchup
- ¼ cup barbecue sauce
- ½ tsp smoked paprika

- Preheat oven to 375ºF and line a 5x8-inch loaf pan with parchment paper.
- In a large skillet over medium heat, heat the oil, then add the onion, celery, carrot, and mushrooms, and cook, stirring occasionally, until the vegetables are soft and most of the liquid has cooked out.
- Using a food processor, pulse the chickpeas until a rough paste forms. Transfer to a large bowl, then add cooked vegetables, bread crumbs, parsley, and soy sauce to the bowl with chickpeas.
- In a medium bowl, whisk together the ketchup and barbecue sauce. Add half of this mixture to the bowl with the chickpeas. Season with paprika, salt, and pepper, and stir until all ingredients are evenly incorporated.
