Ingredients

- 4-5 cups penne pasta
- 4 peach pitted and halved, ripe
- 3 tsp lemon zest
- 2 tbsp Dijon mustard
- 3 cloves garlic minced
- 16 oz. baby arugula fresh
- 2-3 cups blueberries fresh
- kosher salt to taste
- black pepper freshly ground, to taste
- 4-5 tsp maple syrup pure
Instructions
For The Vegan Pasta Salad with Grilled Peaches:
- Boiled the pasta as per the package instruction. Strain with chilled water and strain again.
- In grilled stove, grilled the four peach halves for at least 8-9 minutes or till the grill marks appear.
- For the dressing, combine mustard, garlic, lemon juice and zest. Set them aside.
- In a large bowl, add the pasta, arugula, blueberries, and chopped peaches. Mix to coat. Season to taste with pepper and salt.
- Topped with grilled peaches and pour with maple syrup. Enjoy!
