Apple Cinnamon Oatmeal Cookies
Ingredients
For the batter:
- 1 1/4 cups all-purpose flour
- 1 1/2 cups old-fashioned oats
- 2 tsp cinnamon ground
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 3/4 cup vegan butter unsalted, softened
- 8 oz. brown sugar
- 3 tbsp flax egg
- 2 tsp vanilla extract
- 1 1/4 cup apple finely chopped, Granny smith
- 1 tbsp lemon juice fresh
For the icing:
- 3 tbsp maple syrup
- 1 1/4 cups confectioners' sugar
- 4 tbsp almond milk
Instructions
Make healthy cookies at your home!
- Preheat the oven to 350°F and line a baking sheet with oil.
- In a mixing bowl, mix together the all-purpose flour, old-fashioned oats, cinnamon, baking soda, and kosher salt. Set them aside.
- Cream the vegan butter, and the sugar until well combined using a hand mixer; stir them in a flax egg and vanilla extract.
- Toss the apples with lemon juice then add the flour mixture and flax egg mixture in a separate bowl. Mix them well.
- Using a cookie scoop, heap out about two tbsp and drop it onto prepared baking sheets and flatten them, just like the picture. Repeat it with the remaining mixtures.
