Barbecue Tofu Veggie Skewers

If you’re looking for an easy, creative way to get your daily boost of vegetables, then look no further than these delicious Barbecue Tofu Veggie Skewers. These savory skewers are the perfect balance of protein and veggies wrapped up in a tasty barbecue glaze that will make your tastebuds sing!

Let’s gather the ingredients!

  • 1 14-ounce extra firm tofu
  • 3 tbsp olive oil (divided)
  • 2 tsp cumin
  • ½ tsp smoked paprika
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • 1 tsp kosher salt (divided)
  • ½ tsp black pepper (divided)
  • 2 small zucchini (sliced into 1/4-inch thick rounds)
  • 1 cup cherry tomatoes (cut in half)
  • 2 bell peppers (diced 1 inch)
  • 1/4¼ cup barbecue sauce (vegan)
  • 2 sprigs Rosemary (fresh)

 

Let’s Begin!

 

  1. Preheat a gas or charcoal grill on medium-high heat.

  4. Add the tofu to the spiced oil, stirring it around, so the tofu is coated in the mixture.
  5. In another bowl, toss the vegetables with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper.
  6. Thread the tofu, vegetables, and fresh rosemary on the skewers.
  7. Grill the skewers until the tofu and veggies are charred at the edges and have grill marks, about 2 minutes per side. In the last few minutes of grilling, brush with vegan barbecue sauce.
  8. Serve and enjoy with family and friends!
