Ingredients

- ⅔ cup quick-cooking oats
- 1 pound potatoes
- 3 medium carrots grated
- 2 medium onions grated
- ¼ cup olive oil
- 2 tsp garlic powder
- ¼ cup fresh parsley finely chopped
- salt and pepper to taste

- Preheat the oven to 400°F.
- Place the oats in a small heatproof bowl and cover with 1 cup boiling water. Cover and set aside.
- Cut the potatoes into chunks and grate with the coarse grating blade of a food processor. Transfer to a mixing bowl.
- Grate the carrots and onions. Transfer the mixture to a mixing bowl with the potatoes.
- Add the cooked oats, oil, garlic powder, and parsley to the potato mixture and stir together. Season with salt and pepper and stir again.
