Let's gather the ingredients!

  • cup quick-cooking oats
  • 1 pound potatoes
  • 3 medium carrots grated
  • 2 medium onions grated
  • ¼ cup olive oil
  • 2 tsp garlic powder
  • ¼ cup fresh parsley finely chopped
  • salt and pepper to taste


Let's Begin!

  • Preheat the oven to 400°F.
  • Place the oats in a small heatproof bowl and cover with 1 cup boiling water. Cover and set aside.
  • Cut the potatoes into chunks and grate with the coarse grating blade of a food processor. Transfer to a mixing bowl.
  • Grate the carrots and onions. Transfer the mixture to a mixing bowl with the potatoes.
  • Add the cooked oats, oil, garlic powder, and parsley to the potato mixture and stir together. Season with salt and pepper and stir again.
  • Generously coat the bottom and sides of a 9x13-inch casserole dish with oil. This will help the kugel to develop a nice crispy crust.
  • Pour in the potato mixture and pat it evenly using the back of a spatula.
  • Bake for 60 to 70 minutes, or until golden brown and crusty. Let stand for 10 minutes or so, then cut into squares to serve.
  • Serve warm and enjoy with family and friends!
