We keep a combination of fresh vegetables and some frozen for backup. Then, when we need a quick dinner, we pull it together with a version of air-fry tofu and veggies. This recipe makes the kitchen work go quickly with little clean up.

  • Is it possible to stir-fry these spring veggies on the stove? Absolutely. In a wok or frying pan, warm the oil over medium-excessive warmness. Cook for 4-5 minutes while constantly stirring in the veggies and spices.
  • Is it able to double the dish? Yes, depending on the size of the basket in your air fryer. Filling the basket 12 percent full is excellent, but don’t fill it more than 2/3 full, as the bottom layer will not get cooked as properly. You may also air-fry in batches if you double or quadruple the recipe.

Ingredients
  

  • 1 cup tofu extra firm, cut into strips
  • 4-5 asparagus stalks, ends trimmed and cut in half
  • 5 brussels sprouts halved
  • 3-4 mushrooms brown, sliced
  • 2-3 cloves garlic minced
  • Italian seasoning
  • sesame oil or olive oil
  • soy sauce to taste
  • kosher salt to taste
  • black pepper freshly ground
  • sesame seeds roasted, white

Instructions
 

  • In a mixing bowl, place all the ingredients. Mix well
  • Preheat the air fryer to 350°F, then place the mixed ingredients into the air fryer basket.
  • When cooked, top with roasted white sesame seeds. Served with steamed rice, if desired.

Note:

As with any Stir Fry or Air Fry, change up the ingredients according to what you have on hand. In fact, even the tofu might be replaced with seitan or tempeh.
