Olives come in different varieties and you may find them in jars on supermarket shelves or at an olive bar at a gourmet shop. Green olives from Spain are the most frequent, with Manzanilla and Gordal being two popular varieties in American supermarkets. You might also come across the Picholine, a French green olive, Cerignola, an Italian green olive. Vegan Green Olive Salad Dressing
Ingredients
- 18 medium green olives pitted
- 1-2 cloves garlic
- 2 tbsp olive oil extra-virgin
- 2-3 tbsp lemon juice white wine or sherry vinegar
- kosher salt to taste
- black pepper freshly ground. to taste
Instructions
- Make a paste with garlic and pitted olives using mortar. (Any food processor will do.)
- Put the olive mixture in a blender and stir in the lemon juice and oil.
- Season to taste with kosher salt and black pepper.
- Transfer into a sealed glass jar Sealed and refrigerate for up to a week.
