Ingredients
Brussels Sprout Gratin:
- 1-2 cups Brussels sprouts trimmed and cut
- 1 tbsp oil extra-virgin
- 4-5 slices seitan or substitute tempeh, shiitake mushroom,
- 2 small shallot minced
- 3-4 cloves garlic cut and sliced
- 1-2 tbsp arrowroot starch
- 7 oz coconut milk full-fat
- 1/3 cup vegetable broth
- 2 tsp Dijon mustard
- ¼ tsp dried thyme
- ⅓ tsp nutmeg
- 1/2 cups panko bread crumbs
- kosher salt to taste
- black pepper freshly ground, to taste
- 8 tbsp parmesan cheese
- 8 tbsp gruyere cheese vegan, homemade
Instructions
Cheesy Brussels Sprout Gratin:
- Preheat the oven to 400°F
- In a casserole dish, combine the brussels sprout with olive oil and season with kosher salt and black pepper. Roast them for 21-25 minutes or till completely cooked. Set them aside.
- To cook the sauce, in a medium skillet, cook the seitan or any vegan substitute for bacon till crispy. Add the garlic and shallot then cook again for at least 4-5 minutes.
- Pour and combine the cooked seitan into the arrowroot starch and cook for 1-2 minutes. Add the coconut milk panko bread crumbs, vegetable broth, mustard, thyme, nutmeg, and season with kosher salt and black pepper. Allow the sauce to simmer for around 6-10 minutes
- Mix the seitan mixture with the shredded parmesan cheese. Spill the sauce over the roasted brussels sprout and top with grated vegan gruyere cheese.
- Bake the prepared brussels sprout at 400°F till the cheese melt and have bubbles on the side or bake for around 11-15 minutes.
