Emerald Isle Herbed Hummus Dip
This Emerald Isle Herbed Hummus Dip has a bunch of spinach that adds a lovely rich green tint to this flavorful spread. Spread it on a whole wheat tortilla and top with other fillings for a wrap, or serve it as a dip with carrots, celery, toasted pita triangles, or any other finger food of your choice.
I think this is the simplest recipe I’ve ever written. Simply combine all of the ingredients listed above in a food processor and pulse/blend until smooth. A creamy, thick, and smooth, homemade hummus dip should be the end result.
Recipe Tips
- Since hummus is thick, you may have to pause your blender or food processor a few times to whip up it.
- Do not add any liquid to your hummus dip until all of the other ingredients have been thoroughly blended. If it’s still too thick, gradually add a tablespoon or two of water at a time, blend, and re-evaluate.
- Give it a taste test. If desired, season with more salt, pepper, or other seasonings, before calling your hummus dip done.
Serving Suggestions
Continue serving your lush greenery hummus with your favorite dippable items in a bowl. I like to finish with a drizzle of extra virgin olive oil and a pinch of diced chives. Pine nuts, lemon zest, or even dried chickpeas could be added! With a garnish of “everything but the bagel toppings” on top, Emerald Isle Herbed Hummus Dip is also delicious.

Emerald Isle Herbed Hummus Dip
Ingredients
- 15 oz garbanzo beans can, chickpeas, rinsed and drained
- 2-3 tbsp lime juice
- 1 clove garlic peeled
- kosher salt to taste
- black pepper to taste
- 1-2 cups spinach fresh leaves
- 4 oz cilantro
- 2 oz parsley
- 2-3 oz green onions sliced
- 1-2 tsp chives chopped
Instructions
- In a food processor, combine lime juice, chickpeas, garlic, and 3 oz of water till smooth.
- Mix the rest of the ingredients. Covered till all the ingredients are combined.
- Cover and refrigerate and serve.
