What is Farro?

Suggestions & Recommendations
- I recommend leaving the salad alone if you don’t plan to eat it all at once undressed and tossing it with the dressing as served because the spinach will wilt as it sits.

Farro Spinach Salad-Air Fried Beets
Equipment

Ingredients
For The Farro Spinach Salad:
- 3 oz orange juice
- 2-3 tbsp red wine vinegar
- 4 tsp walnuts toasted, chopped
- 1 tbsp maple syrup pure
- 3 tsp Dijon mustard
- kosher salt to taste
- black pepper to taste
- 2 medium red beets peeled and cut into thick slices
- 6-7 cups spinach fresh, baby
- 3-4 cups Farro chilled cooked
- 2 small pears fresh, chopped and cored
- 4 small red onions chopped
Instructions
- For The Dressing: Place the orange juice to Dijon mustard in a small blender. Blend well till creamy. Season to taste with salt and pepper.
- In a mixing bowl, mix beets and dressing; stir and combine.
- Preheat the air fryer to 350°F.
- Air-fry the beets for 15-20 minutes or till equally ruffled and brown.
- In a mixing bowl, mix the farro, spinach, onion, and pears.
- Pour the remaining dressing over the salad and stir to combine. Serve with beet chips on top.
