Leprechaun Potato Slices
Another leprechaun recipe for you all! These Leprechaun Potato slices were formerly potato slices with pesto and asparagus. But this time I tried to peel the asparagus into thin ribbons then dip them in lemon juice. Oh my god, they were delectable. They are so easy and pretty. They’d be fantastic as snacks parties or appetizers for your St. Patrick’s Day.
In this recipe, I made a vegan pesto with pumpkin seeds, but sunflower seeds would also work well. Speaking of pesto, we have already published a lot of potato recipes, so check it out in case you want it too.

Leprechaun Potato Slices
Ingredients
- 4-5 medium potatoes
- olivolja
- kosher salt to taste
- black pepper
- 1/2 bunch asparagus
- lemon juice
Pesto
- 1-2 cups basil fresh
- 2-3 cups pumpkin seeds or sunflower seeds
- 1 clove garlic
- 8 tbsp nutritional yeast
- kosher salt
- black pepper
- 4 oz olive oil
Instructions
- Preheat the oven at 390F°C.
- Cut the potatoes into 3 slices. Rub with olive oil the sliced potatoes.
- Season with salt and pepper then cooked till they tender.
- Make the pesto by combining all ingredients in a food processor excluding oil. While blending slowly add the oil.
- Skinned the asparagus and dipped it in lemon juice.
- Organize the asparagus ribbons on top of the pesto potatoes. Enjoy!
