Nutritious Meal: Great foods in a casserole!

For some, the idea of a casserole may bring back memories of school lunches or church potlucks. Whatever your association with casseroles may be, one thing is for sure: they are comforting, homey, and (most importantly) delicious. This particular recipe for creamy pasta and butternut squash casserole is not only vegan but also packed with nutrients and flavor. Here’s why this recipe is a nutritious meal:

1. Pasta and Butternut Squash: A Nutritional Powerhouse

Butternut squash is an excellent source of vitamins A and C, as well as potassium and fiber. It is also low in calories and fat-free, making it a great food to incorporate into your diet if you are watching your weight. Pasta is a good source of complex carbohydrates, which provide lasting energy. And when paired with a protein-rich food like tofu, this casserole becomes a nutritional powerhouse.

2. Tofu: The perfect protein-rich addition

Tofu is often thought of as a “health food,” but it is really just soybean curd that has been pressed into block form. It is versatile and can be used in sweet or savory recipes. In this recipe, tofu provides a protein-rich component that helps to make this dish more filling. It also lends itself well to absorb the flavors of the other ingredients in the dish.

So the next time you are in the mood for comfort food, give this creamy pasta and butternut squash casserole a try and you will love this dish.

What’s in a casserole?

All you need in this casserole dish are the simple plant-based ingredients that you can buy at your favorite supermarket and some can harvest in your backyard. You can’t resist making this as they are easy to find. Below are the plant-based ingredients that you will need.

1. Twisted pasta: I used rotelle pasta in this dish as they are perfect for catching the sauce but you can also you rotini pasta. They both work in this dish.

2. Butternut squash: Fresh or frozen will work or feel free to substitute pumpkin or sweet potatoes.

3. Silken tofu: Add more creaminess to this recipe.

4. Almond milk: Use plain and unsweetened milk or use your favorite plant-based milk.

5. Breadcrumbs: Look for a vegan because some of these are not vegan-friendly. Use authentic panko breadcrumbs as an alternative.

6. Seasoning: Use kosher salt and freshly ground black pepper, adjust to taste if needed.

7. Nutritional yeast: It adds an umami flavor to this recipe and has a natural cheesy flavor.

8. Parsley: It uses for garnish, this is optional but a great addition.

9. Onion and olive oil: Saute the onion in the oil to make it flavorful.
